Basically all of the 100 classes are pretty easy, see the average GPAs by professor at Grade Disparity. I took CEE 202, it's probably a little harder but a decent stats course and it probably helped prepare me better for CS 361. I took FSHN 120 for my science elective. The Software Engineering sequence CS427 & 429 can be taken for advanced comp credit. It's not necessarily an easy class (it is easier than most CS sequences but can take a decent amount of time) depending on how much effort you want to put into it.
