Should i use copper or pex

Whole house is 1/2" copper type-L, and I need to T into the lines for a new washing machine closet. My insurance stipulates I only have copper lines in the house, although I doubt anything will ever leak with crimp pex. Selection of sweating valves for these boxes is pretty non-existent for me without shipping.
